Chicken with Yellow Rice


Cooked a family favorite tonight. I forgot how good and easy it is!!


Chicken with Yellow Rice

3-4 chicken breasts

1.5 cups yellow rice

2 cups water

1 cup tomato juice

1 teaspoon salt

1 clove garlic, minced

1 bay leaf
Chopped onion and green pepper (optional)
Dump dry rice in the bottom of a casserole dish. Lay uncooked chicken on top. Mix all remaining ingredients together and pour on top of chicken. Bake, covered, until chicken is done (about an hour) at 350 degrees.

Megan & Adi

So, the engagement I hinted at below is Megan and Adi's!!!
They were in Bosnia visiting all his family that Megan did not know so I wanted to wait until their return. He popped the question while they were in Croatia after the family visits. They have been together since high school!!
We are so happy for them. They move to Chicago next week for Adi to start the MBA program at University of Chicago. We are already excited about going to visit!
No wedding details yet. They are just enjoying the engagement!

The Shinglers

So, now it is back to real life. While not St Lucia, it is still exciting. We have been busy getting settled and putting everything in its proper place. Our house is already too small. : )
We added a king bed and large tv this past weekend. We will order a dining room table and server tomorrow.
I think this is some sort of hibiscus. It is growing right out our front door. Beautiful!!


This is the mess we made opening gifts on Saturday when we returned to Augusta. Geez...

If you were at the wedding, you remember these bottles that guests signed instead of a guestbook. We opened and drank this Dom on Saturday. We will open and drink 'Big Red One' on our 1st anniversary.
We went to dinner with Megan this past Saturday at Pizza Joint. Here Brad is showing her his grill. He has some fake front teeth from a soccer mishap (I think) and she was checking out Dr. Allgood's latest spruce-up. Dr. Shingler approved!!
I am thinking of changing the blog title to 'Shingler's List.' What do you think???

More honeymoon

I left out the most important part - FOOD!!!
It was stupendous. Although, since it was included, I ate way too much. And then couldn't ever finish dinner. Yummy....

Honeymoon - Cap Maison

After three nights up in the mountains (see below, Ladera), we went across the island to Cap Maison. This place was amazing as well. It was different in that it had A/C (upstairs) and a beach. We were spoiled with the view and our own pool at Ladera for sure though.

The beach was cool. Small and private. We staked out some chairs under an umbrella and chilled. We did go snorkeling and that was really cool. We went out maybe 20 feet on one side before we started seeing fish. We saw some cuddlefish, a blowfish, tangs, parrotfish and lots of sea urchins. I was impressed it was that abundant right there at the beach.

Kitchen. Downstairs was not air-conditioned so we weren't down there much. Except to enjoy breakfast on the veranda.

A private dining area that you can rent. Your food and drink goes down on a zip line. Pretty cool!

We had a jacuzzi on the upstairs balcony. Not quite a pool but it was nice nonetheless.
