I have always loved cooking and have tried to do more of it lately. Inspired by Ali's posting of recipes, I thought I would do the same. These are amazing!!
Whole Wheat English Muffins
1 c milk
2 T honey
1/4 c butter
1 T salt
1 c water
1 package yeast
5-6 c whole wheat flour
cornmeal
Warm the milk to between 105-115 degrees in the microwave. Combine with the butter, honey and salt in a stand mixer. Warm the water to the same temperature and dissolve yeast in the water. If it is too hot, the yeast will die so be mindful of the heat. Make sure the milk has cooled down and add the water and yeast mixture to the mixer. Add flour gradually to ensure correct density, until dough pulls away from bowl. This dough will be very heavy. Let the dough rise for one hour in a well-greased, covered bowl. Punch the dough down and roll out to a 3/4 inch thickness. You can shape the dough by hand or use a glass or cookie cutter and let rise another hour, covered, on a cornmeal-dusted sheet pan. Heat a skillet on the stove to 300 degrees and grease. Transfer muffins to the pan very carefully. Do not let them fall! Flip once. You may need to cut them open to see if they are done in the middle.
Most bread recipes are very involved but this one is really easy and well worth it. Enjoy!!!
