Here are two quick and yummy chicken dishes I have managed to cook in the last few months.

Dredge the bone-in breasts in flour and pan-saute in olive oil. Remove chicken and cook down garlic in stock. Add chicken stock, garlic, capers, lemon zest, thyme and bay leaves to taste. Bake, covered (I love my le creuset dutch oven for this) at 350 until done.
